Cilantro Lime Chicken with Cauliflower Rice
As a Puerto Rican, I ate rice every single day until I was 19 and joined the military. Every. Single. Day. But, as you already know, white rice isn’t very healthy. A grain of white rice has been stripped from almost every single nutrient it possessed. The result is a high glycemic food with almost no fiber or nutrients to show for. Brown rice is very nutritious but doesn’t taste very good, in my opinion. Also, both of these options are out of the question if you are on a low carb or keto diet.
That’s why this recipe is one of the best meal prep recipes we have found. This recipe takes care of all those pesky carbs by substituting brown/white rice with cauliflower.
Just look at these macros: 378 calories, 21 grams of healthy fats, 9 grams of net carbs, 7 grams of fiber, and an outstanding 32 grams of fat-burning protein per serving. This healthy meal prep recipe allows you to keep all of the flavor and nutrients of rice with none of the drawbacks.
Tempeh Taco Salad meal prep recipe
To all our vegan friends do not fret, we haven’t forgotten about you. This unusual recipe is a Mexican dish that uses tempeh as a meat substitute.
What’s tempeh? I’m glad you asked. Tempeh is a dish that hails from Indonesia and consists of deep-fried soybeans. NO, this doesn’t mean you have to deep fry the soybeans yourself. You can buy them already deep-fried. An Indonesian and Mexican mashup…who knew? As long as the people at eatingbirdfood.com keep churning out delicious meal prep ideas such as this one, they can come up with all the crazy mashups they want.
Buffalo Chicken WrapsÂ
Hi guys, Delwin, here. I hate lettuce. I hate everything it represents, and what it stands for. Why would I eat the food that my food eats? Am I right? High five! But these buffalo chicken lettuce wraps were delicious. I know, who am I? These wraps were just the right amount of spicy. Also, when you add some quinoa and avocado, these wraps get on another level. PS. Don’t tell Melissa.
